½ c. light soy sauce
2 T. toasted sesame seed oil
1 t. minced fresh ginger root
3 T. sugar
1 T. sesame seeds
3 cloves garlic, minced
¼ t. salt
½ t. freshly ground black pepper
1½ lbs. shark, sea bass, or tuna steaks, 1” or thicker
In a plastic bag, combine all ingredients except fish. Mix the marinade in the bag until combined and add the fish, coating it completely. Seal the bag and refrigerate for 1-2 hours, turning the bag occasionally.
Preheat grill. Brush grill with vegetable oil. Grill fish.

Note: We think shark is the absolute pinnacle of tastiness. When grilled over wood charcoal (not briquettes) it acquires the most amazing smoky flavor. This is easily the best “fish” I’ve ever had! The wood charcoal really seems to do a nicer job of everything. Plus if you get or make a chimney charcoal starter you don’t need lighter fluid, just a couple sheets of newspaper does it. No chemical fumes coming up onto your food.
