Corn & Blueberry Salad in a Curried Orange Dressing

Recipe: Ok, so you KNOW there's a story behind this... I cut this recipe out of the newspaper years and years ago. It was then, and continues to this day, the most horrid recipe I have ever seen. I estimate it would take at LEAST 3 different recipes to acceptably use the 7 ingredients. I've never made it. Nor do I intend to. (Although my friend Lydia dared me to, so I might have to take her up on it someday.) Don't make it. Just marvel at the weirdness of it all...

1 cup frozen orange juice concentrate
1/8 cup white wine vinegar, or more to taste
1/4 cup maple syrup
Juice of 1/2 lime
1 tablespoon curry powder
4 cups fresh cooked corn, or substitute frozen corn
2 cups blueberries
Salt and pepper to taste

Combine the orange juice concentrate, vinegar, maple syrupm lime juice, and curry powder in a blender, and mix about 30 seconds. Toss the corn and blueberries with the dressing. Season with salt and pepper to taste, and serve.

Makes 6 servings.
