From "The New Basics" with slight alterations.
1 1/2 c. rolled oats
3/4 c. flour (I use half whole wheat)
1/2 t. cinnamon
1/2 t. baking soda
8 T. butter, at room temp.
1/2 c. packed brown sugar
1/2 c. granulated sugar
1 egg
1 t. vanilla extract
3/4 c. unsweetened flaked coconut OR chocolate chips
Preheat oven to 350. Put down silicone baking mat, parchment or lightly grease cookie sheets.
Toss oats, flour, cinnamon, and baking soda in bowl.
Cream together sugars and butter. Beat in eggs and vanilla. Slowly beat in dry ingredients. Stir in coconut or chocolate chips. Drop batter by rounded teaspoonfuls, 2" apart on baking sheets. Bake until golden, about 10 minutes. Let cookies cool 2 minutes on baking sheets, then move to wire racks.
Makes about 45 cookies. |
