1 c. dry roasted peanuts (I used unsalted)
1 c. roasted cashew pieces
1/2 c. walnuts
1 t. salt
1 T. dark brown sugar
1 T. molasses
1/4 c. oil (peanut, canola, coconut)
Process nuts in food processor until finely chopped. Add remaining ingredients and process some more. Add a little extra oil if you want it looser.
One recipe (full disclosure, I use heaping measures of nuts :-) contains 85 g net carbs in a total mass of 420g (1 2/3 c)... or 0.2g net carb per 1 gram nut butter.
When cooking, I assume this has the same density as peanut butter: 16 g = 1 T
Nut Butter Balls
Inspired by Em's Almond Balls, Christmas 2025
1 c nut butter
1/2 c powdered sugar (NOTE - try 1/4 c next time)
2 T butter, melted
2 c rice krispies
[chocolate for dipping]
Mix nut butter, powdered sugar, & butter in a medium bowl. Stir in rice krispies and fold to combine. Chill. Roll into 3/4"-1" balls. Chill again.
1 batch of filling (w/ 1/2 c powdered sugar) contains 140 g net carbs.
Chocolate for Dipping

One batch will cover most of one batch of nut butter balls with a thin layer of chocolate. Using Trader Joe's 72% chocolate, that'll be about 1 gram carb/ball.
4 oz 60%+ chocolate, finely chopped or grated
1/4 oz high quality white chocolate (Guittard or Ghiridelli), finely chopped or grated
Put 3 oz chocolate in microwave-safe bowl and microwave at 50% power until mostly melted, stirring frequently. Add remaining 1 oz chocolate and white chocolate in and stir until melted. If not completely smooth, return to microwave for no more than 5 s at a time/stirring until completely melted.
