Benne Wafers (South Carolina/West African Crispy Sesame Seed Cookies)

Recipe: 1/2 c butter, softened
1/2 c dark brown sugar
1 egg
1 t vanilla
1/2 t salt
1 T cornstarch
2 T flour
1.25 c toasted sesame seeds

Beat butter and sugar until light. Add egg and beat well. Stir in vanilla, salt, cornstarch, and flour. Stir in sesame seeds. Chill 30 minutes.

Preheat oven to 325F. Line baking sheet with silicone baking mat or parchment.

Scoop using 1 teaspoon measure (very slightly rounded) onto baking sheet. Space about 2.5" apart. Bake until flattened and edges are lightly browned (about 15 minutes in my oven - but you should keep a watchful eye on your first batch to figure out what it takes in your oven). Let cool a few minutes, then move to cooling rack.

Makes about 50 very thin, crispy cookies.
