CHICKEN
1 lb boneless skinless chicken breasts
2 1/2 T flour
1 t EACH salt, garlic powder, onion powder
1/2 t EACH pepper, paprika
2 T butter
2 T olive oil
FRENCH ONION SAUCE
2 large yellow onions sliced into rings, ¼-inch thick
2 T olive oil
1/2 c water
1/4 t salt
4 garlic cloves, pressed or minced
tiny spoon of chili oil
1 T Worcestershire sauce
1 T soy sauce
2 T flour
1.5 c water
1-2 t beef Better than Bouillon
½ t EACH dried oregano, dried thyme
CHEESES
4 slices provolone cheese
¼ c grated Parmesan Cheese
Slice chicken about 1/2" thick & pound to about 1/4" thick. Cut pieces larger than 2-3" across into smaller pieces.
Whisk the flour and dry seasonings (listed under Chicken) together in a shallow dish. Heat butter and oil in a nonstick oven-safe skillet over medium/med-hi heat. Lightly dredge each slice of chicken in the mixture, shake off any excess and place in skillet. Cook until lightly browned, flip and repeat (chicken doesn't have to be cooked through at this point). Move chicken to a plate and tent with foil.
Preheat oven to 400F.
Wipe out the skillet and return to med-hi heat. Add onions, olive oil, water, & salt. Cover and bring to boil. Cook until water has evaporated and onions start to sizzle, about 10 minutes. Uncover and reduce heat to medium. Use a rubber spatula to press onions onto bottom/sides of skillet. Cook without stirring for 30 seconds. Repeat pressing/stirring every 30 seconds until onions are soft & well-browned. Add the garlic, chili oil, soy sauce and Worcestershire sauce and cook for 30 seconds. Add the flour and cook for one minute. Add the water, Better than Bouillon, thyme & oregano. Bring to a simmer until thickened. Taste and season with salt and pepper if needed.
Once the sauce thickened, add the chicken back to the skillet and stir. Tear provolone cheese into pieces and scatter on top. Sprinkle on Parmesan.
Transfer the oven-safe skillet to preheated oven and bake at 400 degrees F for 10-15 minutes, or until the cheese is melted and chicken is cooked through. Finish with a 1-2 minutes under the broiler to toast the cheese. |
