2 c cranberries, rinsed and picked over
1¼ c sugar
2-3 T water
Put cranberries and sugar in a 3 qt or larger microwave safe bowl.
Microwave on high for 7-8 minutes. Stir. Be careful removing bowl – it will be very hot!
Microwave for another 3-4 minutes. Stir in the water. Allow the preserves to cool on a trivet on the counter.
Note 1: the times are approximate and will vary with microwaves. If in doubt, check/stir more often, but be sure the mixture gets bubbly and most of the berries burst.
Note 2: the water is added because the cranberries contain a LOT of pectin and will create very hard preserves without it. You’ll have to play around to find the perfect consistency for you.
