3 oz light (clear) rum
1/2 of a fresh lime
4 tsp white sugar
fresh mint
club soda
1.) Put the sugar in a highball glass. Stir in a bit of warm water to help dissolve the sugar.
2.) Put 8 mint leaves into the sugar water.
3.) With the handle end of a wooden spoon, "muddle" the leaves. You want to bruise the leaves to release the mint oil, but you dont want to tear them apart.
4.) Add the rum and the lime juice. Stir until all the sugar is dissolved.
5.) Fill the glass with ice.
6.) Top off the ice with club soda.
7.) Stir with a long spoon, making sure to get the mint leaves up off the bottom of the glass.
8.) Garnish with a sprig of fresh mint.
Tips: For easier preparation, you can use simple syrup (sugar syrup) instead of sugar and water. |
