2/3 c. fructose (OR 1 1/3 c. regular granulated sugar)
1/2 c. margarine or butter
scant 1/2 c. milk
1/2 c. cocoa
1 t. vanilla
1/2 c. peanut butter
3 c. oatmeal (dry)
Bring the fructose, margarine, milk, and cocoa to a boil and cook 2 minutes. Remove from heat. Add vanilla and peanut butter and stir until smooth. Add oatmeal and stir.
To make cookies, drop by spoonfuls onto waxed paper.
To make bars, press into 9x9 baking pan (silicone is great) with a sheet of waxed paper.
I altered the recipe of my childhood to make a good bedtime snack in my new role as diabetic (the uncooked oatmeal and fructose are digested very slowly, keeping blood sugar from nose-diving at night.) I reduced the overall sweetness and increased the cocoa which greatly pleases my grown-up taste buds.
If you make 20 bars or cookies, each will have 15 grams of carbs (160 calories; 8 grams of fat). |
